I have been terribly productive today (sent two emails I've been dreading for weeks, finished and sent one job application) and so I've decided to reward myself with baking something exciting and rereading [personal profile] gyzym's Inspiration Posts (because they create tiny explosions of happiness in my brain).

Any suggestions on what I should bake? I'm looking for things that are delicious and not too complicated. :D

These chocolate mini-doughnuts with raspberry glaze are really easy and tasty: http://kitchentrialanderror.blogspot.com/2011/02/raspberry-glazed-baked-chocolate-donuts.html - I made them in a mini-muffin tin, though you could do it in a regular muffin tin or a cake pan easily enough (just adjust the cooking time). (I would leave out the nutmeg - it overpowers the chocolate, imo, and also, you don't need nearly the amount of sugar it recommends for the glaze.)

My other suggestion is my Super Easy Buns.

4oz butter
4oz sugar
3oz self-raising flour
1oz cocoa powder (best one you can afford)
2 eggs

Cream the butter and the sugar together until it looks delicious, add the eggs, mix thoroughly. Then add the flour and the cocoa and mix. Put into bun tins, place in a pre-heated oven (about 180c) for fifteen to twenty minutes. A skewer/toothpick/knitting needle should come out clean. Eat with gusto!

I see your previous commenters and I are on the same wavelength: chocolate cake! I didn't know you're vegan? Otherwise I would suggest simple 6oz SR flour, 6oz marg/butter, 6oz cater sugar, 3 eggs with addition of two generous tablespoons of cocoa powder to the flour. Cooked in two 7" cake tins, once cool filled and topped with chocolate butter icing (UK or US recipe, according to taste / availability of cream cheese).

Or if you're impatient, fairy cakes, topped with icing as above.

It really is the simplest cake in the world (based on Victoria sponge / pound cake), and as long as you beat everything really well, and remember to use self-raising flour, you honestly can't go wrong - and it's really easy to adjust to other flavours, too.

And oops, I forgot to say, the oven temperature is 180C, and the cakes bake for 20 mins.
